Sunday mornings are pancake mornings with @blacksback23 and our little fam! Jan’s recipe includes buttermilk and white flour so I had to find an alternative. I saw a recipe for three ingredient pancakes on someone’s IG but couldn’t find who it was! I googled it and found this recipe from www.nosugarmorespice.com : 1 banana, 1 egg, and a 1/4 cup of pb. Just mash the banana and mix the other ingredients together plus a little cinnamon and cook like regular pancakes! They were sweet enough w/o anything on top but I drizzled it in honey. The consistency is kinda dense, maybe fudgy but crispy on the outside! I love them! 21 grams of protein. I’m going to try another recipe next Sunday to see if I can lower the calories a bit! Jan’s chipotle lime baked chicken (see yesterday’s post for recipe) green beans, quinoa salad, honey Greek yogurt (sorry but I am not at the point where plain Greek yogurt is tasty to me! Day 7 Eats of the day: Chipotle Lime Southwest Salad! This salad was sooo good with just the right amount of kick! A whole romaine heart, corn, black beans, Chipotle Lime Chicken topped with salsa (not pictures) as a dressing! Jam’s Chipotle Lime Chicken
β’Chicken Breasts
β’ 1/2 juice of a lime
β’1/2 juice of a lemon
β’ Garlic Powder
β’ Cumin
β’ Cayenne/Red Pepper
Combine all juice and seasoning, stab chicken with a fork several times, bake at 350 for 35-45 min. After removing, squeeze lime over breasts and ENJOY!!

Tried my version of the bean salad floating around IG. Quick and easy 1 can of black beans (I rinse them to remove the majority of the sodium), 1 can of corn, 1 diced avocado, 1/2 lime (juice), garlic powder, anda dash of Mrs.Das Fiesta Lime seasoning.
